You’ll Need: - Chicken Curry Kit (use the dry spice mix & lemongrass) - 500g chicken thighs (or paneer for a veggie version) - 2 tbsp plain yoghurt - Juice of 1 lime - 1 red onion, chopped - 1 bell pepper, chopped - Skewers (metal or soaked wooden ones)

Optional sides: - Flatbreads - Yoghurt dip (plain yoghurt + a pinch of leftover spice + lemon juice)


Instructions:

1.        Marinate the Chicken:

o   In a bowl, mix the dry spice pack from your Chicken Curry Kit with the lime juice and yoghurt.

o   Chop chicken thighs into chunks and coat them well in the marinade.

o   Leave to marinate for 1 hour (or overnight if you’re planning ahead).

2.        Prep the Skewers:

o   Thread the chicken, red onion and pepper onto skewers.

o   Add a piece of lemongrass between sections for an extra flavour burst.

3.        Grill Time:

o   Fire up your BBQ or grill.

o   Cook skewers for 10-12 minutes, turning occasionally, until charred and cooked through.

4.        Serve Up:

o   Plate with flatbreads, yoghurt dip and fresh herbs.

o   Sprinkle with a squeeze of lime or extra cardamom if you’re feeling fancy.
