Sri Lankan Mustard Prawn Ramen Recipe
Serves: 2
Time: 25 minutes
Ingredients
- 500g prawns (peeled and deveined, heads and shells reserved)
- 1/2 onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2/3 cup greens (spinach, pak choi or similar)
- 1 pack ramen noodles
- 1 Little Big Flavour Kits Mustard Fish Curry Kit
- Up to 2 cups water
- Salt, to taste
- Stock cube and 2 tsp of fish sauce if not using prawn heads and shells for the broth
To garnish:
- Spring onions
- Chilli oil
- Jammy boiled egg (optional)
Method
-
Prepare and marinate the prawns
Peel and devein the prawns, keeping the heads and shells for the broth.
(If unavailable, use a stock cube with a splash of fish sauce instead.)
Toss the prawns with Ground Spice Pack A and set aside. -
Sear the prawns
Heat 1–2 tbsp coconut oil in a saucepan over medium-high heat.
Cook the prawns for 1–2 minutes on each side until lightly golden. Remove and set aside. -
Build the flavour base
In the same pan, fry the prawn heads and shells for 2–3 minutes until fragrant (skip if using stock cube).
Add onion, garlic, ginger, and Whole Spice Pack B. Lower heat and cook for 3–4 minutes until softened. -
Create the broth
Add up to 2 cups of water, scraping up any flavour from the pan.
(Add stock cube and fish sauce here if not using shells.)
Simmer, covered, for 5–7 minutes. -
Cook the noodles
Add ramen noodles and coconut milk powder.
Simmer for 3–4 minutes until just tender. -
Finish
Add greens and return prawns to the pan.
Simmer for 2–3 minutes until everything is cooked through. -
Serve
Taste and adjust seasoning.
Serve hot with spring onions, chilli oil, and a jammy egg if you like.
Make it your own
This is where it gets fun.
- Swap prawns for chicken or tofu
- Add mushrooms or soft-boiled greens
- Turn up the heat with extra chilli oil
- Or keep it simple and let the broth do the work
There’s no right way — just your way.
