Crack, don’t crush: Lightly open the pods to release their seeds and aroma.

Steep for flavour: For a gentle, rounded taste, steep cracked pods in cold water or juice. For a bold, heady hit, add them to hot water or milk.

Infuse oil: Toss whole pods into hot oil at the start of a curry and watch them puff up like tiny papadoms—this perfumes the oil and gives your dish real depth.

Remove before serving: Unless you enjoy a surprise crunch, fish out the pods before serving!

A Sri Lankan Classic with a twist: Lime Juice with Cardamom

On a hot day in Sri Lanka, nothing is more refreshing than a tall glass of iced lime juice, gently perfumed with cardamom. It’s sweet, tart, and just exotic enough to make you feel like you’re on holiday—even if you’re just in your kitchen.Sri Lankan Lime Juice with Cardamom

Ingredients:

4 juicy limes

  • 3–4 green cardamom pods, lightly crushed

  • 4 tbsp sugar (adjust to taste)

  • 1/4 tsp salt

  • 3 cups cold water

  • Ice cubes

Instructions:

  1. Roll the limes to soften them, then juice them into a jug.

  2. Lightly crush the cardamom pods to release their aroma.

  3. Add lime juice, sugar, salt, and cardamom pods to the jug.

  4. Pour in cold water, stir until the sugar dissolves.

  5. Let it sit for 10–15 minutes so the cardamom infuses the drink.

  6. Strain out the pods, pour over ice, and adjust sugar or salt to taste.
