There’s something magical about aubergines — that deep purple sheen, the silky texture, the way they soak up flavour and turn every bite into pure comfort.

For us, this dish began as an obsession. In Sri Lanka, they’re often deep-fried for a rich, indulgent curry. But we wanted to capture that same flavour and warmth in a lighter, brighter way — without losing the soul of the dish.

So we played, we tasted, and we tweaked. And what emerged was something we fell in love with — a gently spiced stir-fry that keeps the aubergine’s melt-in-the-mouth texture, all while bringing out a balance of sweet and savoury.

It’s deliciously comforting, full of island warmth, and perfect alongside our Yellow Fried Rice and crispy papadoms — a simple meal that feels like home.
